[texdoc] option names and verbosity

I think I finally got it (r24). It starts with verbosity level 5
(debug2), and outputs every single affectation to the config table, be
it from command line options, environment, .cnf files, or built-in
defaults. Only very quickly tested (really time to sleep now).
