LaTeXiT has four tabs: Eqnarray, Display, Inline and Text. If you  
only want to typeset text, select the Text tab; if you want text  
within math mode (the first 3 tabs), you have to use the \text{...}  
command:

\text{Hi!}\ a + b = c
