Peter,

You wrote "none of my previously created TeX files will open properly." Are you trying to open these files by double clicking, only to discover that they open in a strange application rather than your usual front end?

This problem is easily solved. Select one of your TeX files but do not open it. Then select "Get Info" in the Finder's "File" menu. A dialog will open describing the file. In the middle of this dialog will be an item "Open with:" followed by a pull down menu. Select the application which you want to open the file from this menu. Just below this item, text will appear reading "Use this application to open all documents like this one." Select the button "Change All..." Now your TeX and LaTeX files
will all open in your chosen front end.
